Yankee Maple Corn Muffins

  1. Grease muffin cups.
  2. Thoroughly mix flour, corn meal, baking powder and salt in a large bowl.
  3. Whisk eggs and brown sugar in another bowl until smooth.
  4. Add milk and maple syrup and whisk to mix.
  5. Pour onto
  6. the dry ingredients and add 4 tablespoons of the melted butter.
  7. Fold in with a rubber spatula just until dry ingredients are moistened. Scoop batter into muffin tins.
  8. Bake at 350u0b0 for 25 to 30 minutes or until golden brown and firm in center.
  9. Let cool in pan 5 minutes. Brush tops with remaining melted butter.
