Yankee Maple Corn Muffins
- 2 c. all-purpose flour
- 1 c. yellow corn meal
- 1 Tbsp. baking powder
- 3/4 tsp. salt
- 2 large eggs
- 1/4 c. packed light brown sugar
- 1 c. milk
- 1/4 to 1/3 c. maple syrup
- 6 Tbsp. (3/4 c.) butter, melted
- Grease muffin cups.
- Thoroughly mix flour, corn meal, baking powder and salt in a large bowl.
- Whisk eggs and brown sugar in another bowl until smooth.
- Add milk and maple syrup and whisk to mix.
- Pour onto
- the dry ingredients and add 4 tablespoons of the melted butter.
- Fold in with a rubber spatula just until dry ingredients are moistened. Scoop batter into muffin tins.
- Bake at 350u0b0 for 25 to 30 minutes or until golden brown and firm in center.
- Let cool in pan 5 minutes. Brush tops with remaining melted butter.
