Banana Date Cake Recipe
- 2/3 c. Nonfat lowfat milk
- 2 tsp Vinegar
- 2 1/3 c. Flour
- 1 2/3 c. Sugar
- 1 1/4 tsp Baking pwdr
- 1 1/4 tsp Baking soda
- 1 tsp Salt
- 2 x Large eggs
- 1 x Egg white
- 1 1/4 c. Mashed very ripe bananas (about 3)
- 3/4 c. Pureed Dates (replaces 3/4 C. shortening)
- 1 tsp Vanilla
- 1/2 c. Minced walnuts, optional Powdered Sugar, optional
- Mix nonfat lowfat milk and vinegar and let stand till thickened.
- Sift together flour, sugar, baking pwdr, baking soda and salt into mixing bowl.
- Stir to blend.
- Lightly beat Large eggs and egg white.
- Add in to flour mix with bananas, Pureed Dates, soured lowfat milk, vanilla and nuts.
- Stir just till blended.
- Pour into 12-c. bundt pan sprayed with non-stick vegetable spray.
- Bake at 350 degrees F. 45 to 55 min or possibly till cake tests done.
- Remove to wire rack to cold.
- If you like, sprinkle with powdered sugar and serve.
- Makes 16servings.
- Note: In place of nonfat lowfat milk and vinegar, substitute 2/3 c. buttermilk if you like.
