Potatoes Florentine

  1. Heat oil in saute pan on medium high heat.
  2. Add 1 clove minced garlic and saute for approximately 1 minute.
  3. Then add Simply Potatoes to pan.
  4. Add salt/pepper then cover and cook 12-15 minutes, stirring occasionally.
  5. In a skillet, cook bacon until brown.
  6. Remove from pan, chop, and set aside.
  7. Also, set aside 2 Tbs of bacon grease.
  8. In a medium sauce pan, add 2Tbs water and spinach.
  9. Cover and let steam for 5 minutes stirring occasionally.
  10. Drain water and remove spinach from pan.
  11. Add bacon grease and saute 1 clove minced garlic for approximately 1 minute.
  12. Add cream and goat cheese.
  13. Heat on medium heat until warm and bubbly, approximately 5 minutes.
  14. Return spinach to pan and add chopped bacon.
  15. Cook another 2 minutes.
  16. In a deep skillet, add 4 cups water, vinegar, and 2 tsp salt.
  17. Heat liquid to 180 degrees.
  18. Add eggs and poach for 4 1/2 minutes.
  19. Remove eggs and place on cloth.
  20. For plating, add potatoes to plate.
  21. Then layer with creamed spinach and one poached egg.
  22. Sprinkle with salt and pepper.
