Aubergine A La Grecque Recipe
- 1 med Aubergine
- 1/4 c. Oil
- 2 Tbsp. Butter
- 1 c. Minced onion
- 2 x Cloves garlic, crushed
- 1 can (16-ounce) whole tomatoes
- 1/2 c. Minced parsley
- 1/4 c. Lemon juice
- 1 tsp Nutmeg
- 1 tsp Salt
- 1/2 tsp Black pepper
- Peel aubergine and cut in 1/2 inch cubes.
- In heavy skillet, saute/fry aubergine in oil and add in butter till lightly browned.
- Remove.
- Saute/fry onion and garlic till soft.
- Return aubergine and add in can of tomatoes, liquid removed.
- If fresh tomatoes are available, use them.
- Add in rest of ingredients.
- Bring to a boil, reduce heat and simmer 15 min.
- Stir.
