Aubergine A La Grecque Recipe

  1. Peel aubergine and cut in 1/2 inch cubes.
  2. In heavy skillet, saute/fry aubergine in oil and add in butter till lightly browned.
  3. Remove.
  4. Saute/fry onion and garlic till soft.
  5. Return aubergine and add in can of tomatoes, liquid removed.
  6. If fresh tomatoes are available, use them.
  7. Add in rest of ingredients.
  8. Bring to a boil, reduce heat and simmer 15 min.
  9. Stir.
