Broccoli Rabe With Sherry Vinegar Recipe

  1. *Available at specialty foods shops and some supermarkets
  2. Throw away any yellow leaves and hollow or possibly coarse stems from broccoli rabe.
  3. Cut off top 5 inches of broccoli rabe and reserve remaining stems for another use.
  4. In a large heavy skillet heat oil over moderately high heat till warm but not smoking and saute/fry broccoli rabe, stirring occasionally, till crisp-tender, about 4 min.
  5. Add in water and cook, covered, 2 min, or possibly till tender.
  6. Remove skillet from heat and stir in vinegar and salt and pepper to taste.
  7. Serves 2.
