Parma Rosa (Rose) Sauce
- 1 olive oil
- 4 clove garlic, diced finely
- 1/2 onion, chopped finely
- 1 can tomato sauce (398 ml)
- 1 can diced tomatoes (398 ml)
- 1 salt and pepper to taste
- 2 tbsp dry basil
- 1/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tbsp dry parsley
- 1 pinch sugar
- Heat heavy saucepan with olive oil (approximately 1/4 cup) over medium heat.
- Add garlic and onions, saute until tender (about 2-3 minutes).
- Add tomato sauce, diced tomatoes, basil, parsley, salt & pepper.
- Reduce heat and cover.
- Simmer for at least 10 minutes, stirring occasionally.
- Stir in cheese and then cream and sugar.
- Simmer on low heat until cream is incorporated and sauce thickens to desired consistency.
- Serve with shell pasta and garnish with fresh parsley and Parmesan cheese if desired.
