Crock Pot Southwest Chicken
- 4 chicken breasts, diced
- 16 ounces medium hot salsa, divided
- 1 (15 1/4 ounce) can black beans, drained and rinsed
- 1 (15 1/4 ounce) can whole kernel corn
- 12 cup cheese, shredded
- Mix corn, beans and half the jar of salsa in the crock pot.
- Place chicken on top of the mixture.
- Cook on LOW for 4-6 hours.
- About 10 minutes before you eat, sprinkle with cheese and let it melt.
