Red Cabbage
- 1 head about 3 lbs. red cabbage, cored and shredded
- 1 12 cups beef stock or 1 12 cups beef bouillon
- 12 cup brown sugar, firmly packed
- 12 cup cider vinegar
- 4 tablespoons butter
- 14 teaspoon fresh ground black pepper
- Combine all ingredients in large stainless-steel pot.
- Bring to a boil, stir, cover, and simmer over low heat, stirring occasionally, for 1 hour and 15 minutes.
