Hoummus
- 1-1/2 cup raw chickpeas, soaked 1-1/2 hours and boiled until very soft
- 3 md. cloves garlic
- 1-1/2 tsp. salt
- 2 md. lemons, juice of
- 3/4 cup tahini
- 1/4 cup finely minced parsley, packed
- Black pepper, to taste
- 1 dash cayenne pepper
- 1/4 cup minced scallions
- Mash chickpeas to a thick paste, using a food mill or grinder, or masher.
- Combine everything and chill thoroughly.
