Leftovers Sausage Casserole
- 1 Tablespoon Oil
- 1 whole Brown Onion, Sliced
- 2 cloves Garlic, Chopped/minced
- 6 sprigs Thyme, Removed From Stalk
- 4 whole Small Carrots, Cut Into Rings
- 2 whole Potatoes, Medium, Cubed, 1" Pieces
- 1 can Diced Tomatoes (400g)
- 2 Tablespoons Gravy Powder, Heaped
- 2 cups Boiling Water
- 4 whole Beef Sausages, Pre-cooked
- 1 bunch Parsley, Torn
- 1 cup Frozen Peas
- Preheat oven to 180C.
- Heat a flameproof and oven-safe casserole dish (use one that has a lid youll use the lid later) on medium.
- Add oil.
- Fry onions and garlic until soft and mostly cooked.
- Add thyme and cook until fragrant.
- Add carrots and potatoes and stir until they are warmed and carrots are softened.
- Add tomatoes; stir to combine.
- Dissolve gravy powder in the boiling water and add it to the pan.
- Note that more water or gravy powder can be added to change the consistency.
- Add sausages and parsley.
- Put lid on the pot and transfer into oven.
- Cook for approximately 45 minutes, then add frozen peas.
- Cook for another ten minutes or so until peas are hot.
- Serve with mashed potato.
