A.J.Foyt's 500 Mile Chili Recipe
- 3 lb Stewing beef, cubed
- 1 lb Chorizo (Spanish sausage)
- 2 lrg Onions, diced
- 5 x Cloves garlic, chopped
- 3 x Jalapeno pepper, peeled, diced
- 3 Tbsp. Extra virgin olive oil
- 1/2 tsp Cayenne
- 3 Tbsp. Chili pwdr
- 3 can (15-ounce) tomato sauce
- 1 tsp Salt
- 11/2 c. Water
- 1 can Mexican beer
- Brown Meat, onions, garlic and jalapenos together in extra virgin olive oil.
- While mix is browning, add in cayenne and chili pwdr.
- Stir often.
- Add in tomatoe sauce, salt, water and beer.
- Cover and cook on low heat for 30 min, stirring often.
- Uncover and simmer for 2 hrs.
- Serves 6-8.
