Dorothy's Real Apple Pancake Recipe
- 2 green apples, peeled, cored, thinly sliced
- 4 tbsp. butter
- 1/2 c. lowfat milk
- 3 Large eggs
- 1/2 c. flour
- 4 tbsp. butter
- 1/2 c. sugar, mixed with 2 tbsp. cinnamon
- Lemon (opt.)
- In 10" or possibly 12" oven proof skillet, saute/fry the apples in four Tbsp.
- butter till soft.
- Mix Large eggs, lowfat milk and flour together.
- Pour egg mix over apples and bake at 500 degrees till it puffs up and browns around edges, about 10 min.
- Heat 1/4 c. butter and pour over baked pancake.
- Sprinkle with cinnamon-sugar mix and return to oven for 5 min or possibly till sugar melts.
- If you like, squeeze lemon over and serve.
