Bok Choy Stir-Fry with Ginger and Garlic
- 1 tablespoon olive oil or peanut oil, sunflower oil
- 2 cloves garlic minced
- 1 tablespoon ginger freshly minced
- 8 cups bok choy freshly chopped
- 2 tablespoons soy sauce, light
- 1 x salt and black pepper
- Heat oil in a large skillet over medium heat.
- Add garlic and ginger and cook 1 minute.
- Stir in bok choy and soy sauce, cook about 4 minutes, until greens are wilted and stalks are crisp-tender.
- Season with salt and black pepper.
- Serve warm and enjoy!
