Chanterelle and Coral Mushrooms

  1. In a pot of salted boiling water, blanch the coral mushrooms for 2 minutes.
  2. Drain and set aside.
  3. In a large skillet, melt 4 tablespoons of the butter over moderate heat.
  4. Saute the chanterelles until tender, about 8 minutes.
  5. Set aside.
  6. In the same skillet, melt the remaining 4 tablespoons of the butter over moderate heat.
  7. Saute the chanterelles until tender, about 8 minutes.
  8. In a medium skillet, melt the remaining 4 tablespoons butter over moderate heat.
  9. Saute the coral mushrooms for 5 minutes, until tender.
  10. Combine, season with salt and pepper and serve.
