My Boyfriends Meatloaf
- 1 box (6 Oz. Box) Stovetop Stuffing/dressing
- 1 package (1 Oz. Packet) Lipton Onion Soup Mix
- 1 pound Ground Beef
- 1 whole Egg
- 1/2 cups Oatmeal Or Breadcrumbs
- Preheat oven 350F.
- Prepare a loaf pan.
- Line with tin foil to lift the baked loaf out and spray with Pam or similar nonstick spray.
- Prepare the stuffing/dressing mix in the microwave.
- Place ground beef in a large bowl.
- Add beaten egg and mix thoroughly.
- Add a handful of oatmeal or breadcrumbs and mix well.
- Add onion soup mix and mix well.
- On the counter, lay out about 14 to 16 inches of either waxed paper or Saran wrap and position it so you can roll this towards you.
- Place the burger mixture in the centre and press with a large spoon into a rectangular shape with an even depth of about 3/4 inch all around.
- The width of the rectangle should be the same as the length of a loaf pan.
- Place the prepared dressing (Stovetop) mixture all over the meat.
- Slightly press it into the mixture and leave a bit of an exposed edge.
- Take the far edge of the Saran wrap and pull towards you so the mixture rolls into a pinwheel.
- As you roll gently, press the mixture to avoid breakage and press the edges to the inside.
- Continue rolling and when complete, secure the edge into the loaf with your fingertips.
- Place the loaf in the foil-lined loaf pan and bake for about 45 minutes or until nicely browned on top.
- Let the loaf sit for about 5 minutes to set before slicing.
