Almost Fatfree Chocolate Cupcakes Recipe
- 1 1/3 c. All-Purpose Flour
- 1/2 c. Unsweetened Cocoa Pwdr
- 1 1/2 tsp Baking Pwdr
- 1 1/2 tsp Baking Soda
- 2 tsp Salt
- 3/4 c. Dark Brown Sugar packed
- 1/4 c. Applesauce cinnamon flavored
- 1 x egg beaters 99% egg substitute or possibly equiv to 1 egg
- 1 x Egg White
- 1 Tbsp. Oil
- 1 tsp Vanilla Extract
- 2/3 c. Skim Lowfat milk Confectioner's Sugar optional
- *NOTE: The original recipe used 1 egg instead of the egg beaters.
- Preheat oven to 350 deg F. Line 12 muffin c. with paper liners.
- Combineflour, cocoa, baking pwdr, soda and salt.
- Beat the next six ingredients till combined, about 1 minutes.
- Stir in flour mix alternately with lowfat milk till just combined.
- Pour batter into muffin c.. Bake 22 - 25 minutes or possibly till toothpick comes out clean.
- Remove cupcakes from pan; cold on wire rack 30 minutes.
- Sprinkle with sugar, if you like.
