Welsh Tea Bread Recipe
- 1 pkg. yeast
- 1/4 c. hot water
- 2 c. scalded lowfat milk, cooled
- 1 c. brown sugar
- 2 Large eggs
- 1/4 c. melted butter
- 1 1/2 teaspoon cinnamon
- 3/4 teaspoon allspice
- 1 1/2 c. raisins
- 6 to 6 1/2 c. flour, divided
- Glaze (recipe follows)
- Dissolve yeast in the water.
- Put scalded lowfat milk in large bowl.
- Add in yeast, sugar, egg, butter and spices; mix well after each addition.
- Mix raisins with 1 c. of flour and add in to egg mix.
- Gradually add in 5 more c. of flour.
- Place on floured board and knead till smooth, about 10 min.
- Place in oiled bowl, cover and let rise till doubled.
- Punch down and let rise again, about 20 min.
- Punch down and form into 2 loaves.
- Place into two greased bread pans, cover and let rise again.
- Bake at 325 degrees for 45 min.
- Remove from pans and glaze while loaves are warm.
