Cream Of Broccoli-Vegetable Soup
- 1 c. chopped celery
- 1 c. chopped onion
- 1 (10 oz.) pkg. frozen chopped broccoli
- 1 (10 3/4 oz.) can condensed chicken broth
- 1 c. low-fat cottage cheese
- 2 c. skimmed milk
- 2 (10 oz. each) pkg. frozen mixed vegetables, cooked and drained
- 1/4 tsp. salt (optional)
- 1/8 tsp. pepper
- Combine celery, onion, frozen broccoli and chicken broth in a medium-sized saucepan.
- Bring to a boil.
- Cover and reduce heat. Simmer 10 minutes or until vegetables are tender.
- Place half the soup mixture and half of the cottage cheese in blender container. Cover.
- Blend until smooth.
- Pour into a 3-quart saucepan.
- Repeat with remaining vegetables and cottage cheese.
- Stir in milk, cooked vegetables, salt and pepper.
- Heat through, but do not boil.
- Serve immediately.
