Caramel Sundae Cookies
- 2/3 cup Land O Lakes Butter, softened
- 1 cup firmly packed brown sugar
- 1 Land O Lakes Egg
- 1 teaspoon vanilla
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup milk chocolate chips
- 3/4 cup milk chocolate English toffee bits
- 3/4 cup chopped pecans
- 1/2 (14-ounce) (about 25) package caramels, unwrapped
- 2 tablespoons Land O Lakes Heavy Whipping Cream
- 1/2 cup milk chocolate chips, melted
- Heat oven to 350F.
- Combine butter and brown sugar in bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add egg and vanilla.
- Continue beating until well mixed.
- Add flour, baking soda and salt; beat at low speed until well mixed.
- Stir in 3/4 cup chocolate chips, toffee bits and pecans.
- Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets.
- Bake 9-11 minutes or until edges are golden brown.
- Remove to cooling rack.
- Cool completely.
- Place caramels and whipping cream in 1-quart heavy saucepan.
- Cook over medium-low heat, stirring constantly, 5-10 minutes or until smooth.
- Drizzle cooled cookies with melted caramel; drizzle with melted chocolate.
