Caramel Sundae Cookies

  1. Heat oven to 350F.
  2. Combine butter and brown sugar in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add egg and vanilla.
  5. Continue beating until well mixed.
  6. Add flour, baking soda and salt; beat at low speed until well mixed.
  7. Stir in 3/4 cup chocolate chips, toffee bits and pecans.
  8. Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets.
  9. Bake 9-11 minutes or until edges are golden brown.
  10. Remove to cooling rack.
  11. Cool completely.
  12. Place caramels and whipping cream in 1-quart heavy saucepan.
  13. Cook over medium-low heat, stirring constantly, 5-10 minutes or until smooth.
  14. Drizzle cooled cookies with melted caramel; drizzle with melted chocolate.
