Baked Polenta Logs With Goats Cheese & Prosciutto

  1. Place water in a saucepan.
  2. Bring to boil, pour polenta into boiling water.
  3. Bring to the boil, stirring until mixture is thick.
  4. Reduce heat, simmer, stirring for 5 to 10 minutes.
  5. Spread polenta into a lightly oiled 20cm square cake tin.
  6. Refrigerate for 2 hours or until firm.
  7. Remove polenta from tin.
  8. Cut into 24 small logs.
  9. Spread one side of each with a generous amount of cheese.
  10. Top with a piece of rocket.
  11. Wrap a strip of prosciutto around each log.
  12. Arrange on a baking tray.
  13. Bake in a moderate oven 180C/350F for 10 minutes or until prosciutto is slightly crisp.
  14. Serve warm.
