Dijon Lamb Chops
- 4 -6 lamb rib chops
- 1 lemon, cut in half
- garlic powder
- fresh ground pepper
- 1 cup chopped fresh parsley
- 13 cup Dijon mustard
- 1 tablespoon wheat bran
- 1 teaspoon wheat bran
- vegetable oil cooking spray
- Trim fat from lamb chops.
- Rub both sides with lemon; sprinkle lightly with garlic powder and pepper.
- Combine parsley and next 2 ingredients, mix well, and press on all sides of chops.
- Place chops in a 12x8x2 inch baking dish coated with cooking spray; bake, uncovered,at 500F for 4 minutes.
- Reduce heat to 350F and bake chops an additional 15 minutes.
