Ham and Corn Chowder
- 1 cup diced ham
- 15 ounces cream-style corn
- 14 cup chopped onion
- 12 cup chopped celery
- 12 cup thin sliced carrot
- 2 cups diced potatoes
- 12 cup chopped cooked bacon
- 14 cup chopped green pepper
- 14 cup chopped red pepper
- 3 tablespoons chicken bouillon
- 14 teaspoon pepper
- salt
- 2 cups milk
- 14 cup flour
- 14 cup butter
- Place potatoes, carrots, celery,green pepper,red pepper,chicken boullion, onion and ham in large saucepan.
- Cover with 2 cups water and cook until potatoes are just tender, about 10 minutes.
- Make white sauce: Melt butter in saucepan, stir in flour.
- Gradually add milk, salt and pepper, stirring constantly until thickens.
- Add corn and mix thoroughly.
- Add to vegetable mixture and heat thoroughly.
- Do Not Boil!
- Sprinkle Parmesan cheese on top and serve.
- Variation: Add 2 cups shredded Cheddar cheese to white sauce.
