Spicy Goat Cheese Corn Dip

  1. Cook the onions in the coconut oil over medium heat.
  2. Roast the ears of corn for 5 minutes in the oven at 375 degrees F. Let cool 5 minutes then scrape the corn off the cob with a sharp knife and add that to the onions in the skillet.
  3. Add the bell peppers to the skillet.
  4. Turn off the heat, add the sour cream, hot sauce, goat cheese, half the cheese and stir.
  5. Put in a baking dish, put the rest of the cheese on top.
  6. Bake at 375 degrees F for 20 minutes.
  7. Serve with the tortilla chips.
