Sweet and Savory Pork with Egg Noodles
- 12 oz. egg noodles
- 2 tbsp. olive oil
- 4 pork chops
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1 large onion
- 2 tsp. smoked paprika
- 1 clove garlic
- 1 tbsp. cider vinegar
- 1/4 c. water
- 1 can diced tomatoes
- 1 tbsp. butter
- 1/4 c. Parsley
- 1/2 c. sour cream
- Cook 12 ounce egg noodles as directed.
- Meanwhile, heat 1 tablespoon of olive oil in 12-inch skillet on high.
- Sprinkle pork chops with 1/4 teaspoon salt and pepper.
- Cook for 4 minutes, turning over once; transfer to plate.
- Heat 1 tablespoon of olive oil in same skillet on medium-high.
- Add 1 large onion, sliced; and cook 5 minute, stirring.
- Mix in 2 teaspoons of smoked paprika and 1 clove garlic, pressed.
- Add 1 tablespoon cider vinegar, 1/4 cup water, and 1 (15-ounce) can diced tomatoes; return chops to skillet.
- Simmer 15 minutes or until pork is 145 degrees F.
- Toss noodles with 1 tablespoon butter and 1/4 cup chopped parsley.
- Slice chops.
- Stir 1/2 cup reduced-fat sour cream into sauce.
- Add noodles, then chops, to plate; spoon on sauce.
