Sweet and Savory Pork with Egg Noodles

  1. Cook 12 ounce egg noodles as directed.
  2. Meanwhile, heat 1 tablespoon of olive oil in 12-inch skillet on high.
  3. Sprinkle pork chops with 1/4 teaspoon salt and pepper.
  4. Cook for 4 minutes, turning over once; transfer to plate.
  5. Heat 1 tablespoon of olive oil in same skillet on medium-high.
  6. Add 1 large onion, sliced; and cook 5 minute, stirring.
  7. Mix in 2 teaspoons of smoked paprika and 1 clove garlic, pressed.
  8. Add 1 tablespoon cider vinegar, 1/4 cup water, and 1 (15-ounce) can diced tomatoes; return chops to skillet.
  9. Simmer 15 minutes or until pork is 145 degrees F.
  10. Toss noodles with 1 tablespoon butter and 1/4 cup chopped parsley.
  11. Slice chops.
  12. Stir 1/2 cup reduced-fat sour cream into sauce.
  13. Add noodles, then chops, to plate; spoon on sauce.
