Asparagus and Pear Bites

  1. Preheat oven to 400 degrees F. Layer a non-stick baking sheet with parchment paper.
  2. Roll out puff pastry on a floured surface.
  3. Using a knife, slice it into elongated diamond shapes approximately 1 1/2 inches wide, by 3 1/2 inches long.
  4. Lay 2-3 pieces of asparagus onto each piece of puff pastry hamburger-style so the longer edges of the puff pastry can be folded over later.
  5. Top asparagus with crumbles of Beechers cheese and 1 slice of pear.
  6. Season with a dash of ground pepper.
  7. Squeeze a few drops of lemon juice over the top of the pepper.
  8. Fold elongated corners of puff pastry over the cheese, pear and asparagus.
  9. Its okay if the asparagus and pear are sticking out.
  10. Using a pastry brush, brush some egg onto the top of the pastry.
  11. Bake bites for 15 minutes.
  12. Serve while still warm.
