Portillos Style Italian Beef and Cheddar Croissants

  1. Preheat the oven to 400 degrees F.
  2. Cut the green peppers into quarters.
  3. Remove the the seeds and ribs.
  4. Place in a baking dish.
  5. Coat with olive oil and sprinkle with a little salt, pepper, and garlic powder.
  6. Bake for 1 hour.
  7. Once the peppers are cooked, pour the au jus (see note below) into a pot and heat on high.
  8. Slice the croissants from one end to the other without cutting all the way throughyou want a pocket.
  9. Sprinkle with shredded cheddar cheese.
  10. Once the au jus is hot, add the cooked peppers.
  11. Let the peppers soak in the au jus for a couple minutes.
  12. Add the roast beef.
  13. You dont want to cook it too long; just heat it up.
  14. Add the hot beef and the peppers to the croissants.
  15. Top with giardiniera.
  16. Serve with a side of au jus.
  17. Note: At the deli, if you buy 1 pound or more of roast beef, they will usually give you a container of au jus.
  18. That is what we do.
