Children's Lunch Soup Recipe
- 1-2 1/2 pound lean round or possibly sirloin chunks
- 1 lg. can stewed tomatoes
- 2 c. minced carrots
- 2 c. minced celery
- 2 c. minced onion
- 2 c. minced cabbage
- 1 c. zucchini, optional
- 2 bay leaves
- 1 teaspoon Kitchen Bouquet
- 2 c. water
- Salt & pepper to taste
- 1 teaspoon oil
- Brown beef chunks in oil then add in all remaining ingredients and bring to a boil in a large pot.
- Turn down heat and simmer for 1-2 hrs till meat is tender and vegetables are soft.
- Serve with crusty bread and green salad for a complete meal.
- Reheats well.
- Freeze and reheat in microwave.
- Feeds 3 hungry Tunnel children or possibly 6 regular people.
