Creamy Coleslaw
- One 16-ounce bag shredded coleslaw cabbage
- 1 medium green or red bell pepper, sliced into short, thin strips
- 3/4 cup natural low-fat ranch dressing
- 2 tablespoons white balsamic or white wine vinegar
- Freshly ground pepper to taste
- Combine all of the ingredients in a serving bowl and mix thoroughly.
- Cover and let stand for 15 to 30 minutes before serving, stir again, and serve.
- Veggie burgers on whole grain buns with your favorite fixings

- Microwaved potatoes or sweet potatoes
