Curried Lentils And Rice Recipe
- 1/2 c. brown rice
- 1 onion, minced
- 2 garlic cloves, chopped
- 2 tbsp. oil
- 1 teaspoon curry pwdr
- 2 c. water
- 1 tbsp. lemon juice
- 1/2 c. lentils
- 1/4 pound spinach, minced
- 12 cherry tomatoes, sliced in half, optional
- Saute/fry rice, onion and garlic in oil till sizzling.
- Add in curry pwdr, then 2 c. water, lemon juice and lentils.
- Cover and simmer till tender (about 40 min).
- Stir in minced spinach (raw).
- Remove from stove and allow to stand covered for about 5 min.
- Serve topped with cherry tomatoes.
- Serves 4 to 6.
