Bruschetta Pizza with Garlic-Olive oil
- 1/2 each 100% Whole Wheat Pizza Dough, prepared (click to view recipe)
- 1 pint cherry tomatoes halved, or other sweet vine-ripe tomatoes
- 1/4 cup red onion finely chopped or minced
- 1/4 cup basil leaves, freshly chopped
- 1 clove garlic or to taste, minced
- 2 tablespoons olive oil, extra-virgin
- 1 x salt and black pepper to taste
- 1/4 cup olive oil
- 2 cloves garlic crushed
- 3/4 cup feta cheese crumbled, or goat cheese
- Preheat oven to 425 degrees F.
- Place the crushed garlic and olive oil in a bowl and whisk until mixed well.
- Set aside.
- Mix together the tomatoes, red onions, basil, garlic and olive oil in a medium bowl.
- Season with salt and black pepper to taste.
- Set aside.
- Prepare the pizza dough according the recipe or use store-bought pizza dough.
- Brush the crust with garlic oil.
- Bake for about 12 minutes or until the crust is crispy.
- Top with bruschetta and feta or goat cheese and continue baking for another 3 to 5 minutes, until the cheese starts melting and becomes slightly brown on spots.
- Serve warm.
