Season's Best Pumpkin Cookies

  1. In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
  2. Add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined.
  3. Beat in the pumpkin, egg and vanilla.
  4. Beat in as much flour as you can with the mixer.
  5. Stir in any remaining flour with a wooden spoon.
  6. Stir in butterscotch pieces.
  7. Drop by rounded teaspoons onto an ungreased cookie sheet.
  8. Bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned.
  9. Remove cookies and cool completely on a wire rack.
  10. Makes 60 cookies.
