Season's Best Pumpkin Cookies
- 12 cup butter
- 1 14 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 (15 ounce) can pumpkin
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 (10 ounce) package butterscotch chips
- In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
- Add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined.
- Beat in the pumpkin, egg and vanilla.
- Beat in as much flour as you can with the mixer.
- Stir in any remaining flour with a wooden spoon.
- Stir in butterscotch pieces.
- Drop by rounded teaspoons onto an ungreased cookie sheet.
- Bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned.
- Remove cookies and cool completely on a wire rack.
- Makes 60 cookies.
