Double Chocolate-Covered Peanut Cookies

  1. Heat oven to 375F.
  2. Combine flour and cocoa in small bowl until well mixed; set aside.
  3. Combine butter, sugar and vanilla in large bowl; beat at medium speed until creamy.
  4. Add flour mixture; beat at low speed until well mixed.
  5. Shape rounded teaspoonfuls of dough around each chocolate-covered peanut to form 1-inch balls.
  6. Place 1 inch apart onto ungreased cookie sheets.
  7. Bake 9-11 minutes or until set.
  8. Cool 1 minute on cookie sheets; remove to cooling racks.
  9. Cool completely.
  10. Place candy coating into small microwave-safe bowl.
  11. Microwave, stirring frequently, 60-90 seconds or until melted and smooth.
  12. Dip tops of cooled cookies into melted candy coating or sprinkle with powdered sugar.
  13. *Substitute your favorite chocolate-covered nuts such as almonds or macadamias.
