Sunny Tomato Somen Noodle Soup

  1. Prepare the noodles and toppings: Boil whatever noodles you prefer, such as somen, udon, cellophane noodles, or even tofu.
  2. Top with fillings such as tomatoes, cucumbers, soft poached egg, ham, chicken, or grilled veggies.
  3. The ratio of canned tomatoes to mentsuyu should be 2 to 1.
  4. Mix together, then combine with the other herbs.
  5. Drop in ice cubes, then use as a dipping sauce for noodles, or serve the noodles in the sauce.

  7. Serve hot or chilled!
