Sunny Tomato Somen Noodle Soup
- 1 serving Boiled somen noodles
- 100 ml or more, adjust (to taste) Canned tomatoes or tomato juice
- 50 ml or more, adjust (to taste) Mentsuyu
- 1 tbsp or more Olive oil
- 2 Shiso leaves or basil leaves
- 1 dash Garlic, finely chopped green onions
- 1 Lemon juice *Refer to Helpful Hints
- 1 Tabasco sauce
- 1 Grated cheese
- Prepare the noodles and toppings: Boil whatever noodles you prefer, such as somen, udon, cellophane noodles, or even tofu.
- Top with fillings such as tomatoes, cucumbers, soft poached egg, ham, chicken, or grilled veggies.
- The ratio of canned tomatoes to mentsuyu should be 2 to 1.
- Mix together, then combine with the other herbs.
- Drop in ice cubes, then use as a dipping sauce for noodles, or serve the noodles in the sauce.

- Serve hot or chilled!
