Blueberry Struesel Cake
- 1 cup 100% wheat bran high fibre cereal l
- 1 cup plain yogurt
- 1/2 cup butter or margarine, softened
- 3/4 cup granulated sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1 pkg. (300 g) frozen blueberries Whole Foods 3 For $10.00 thru 02/09
- 1/3 cup sugar
- 1/3 cup all-purpose flour
- 3 Tbsp. butter or margarine
- 1 tsp. ground cinnamon
- Just follow our simple steps:
- Combine 1 cup each 100% wheat bran high fibre cereal and plain yogourt; set aside to soften.
- Cream 1/2 cup softened butter or margarine and 3/4 cup granulated sugar until light.
- Beat in 1 egg.
- Blend 1 1/2 cups all-purpose flour and 1 tsp.
- Magic Baking Powder into creamed mixture alternately with cereal mixture, mixing well after each addition.
- Spread into greased 9-inch square pan.
- Spoon 1 pkg.
- (300 g) frozen blueberries evenly over surface.
- Combine 1/3 cup each sugar and all-purpose flour with 3 Tbsp.
- butter or margarine and 1 tsp.
- ground cinnamon.
- Sprinkle over blueberries.
- Bake at 350 F for 55 to 65 minute or until toothpick inserted in centre comes out clean.
- Cool.
