Herbed Spinach Stuffed Mushrooms

  1. Preheat oven to 400 degrees.
  2. Mix stuffing mix and hot water in a large bowl; set aside.
  3. Remove stems from mushrooms.
  4. Chop mushroom stems and set aside.
  5. Melt butter in large skillet on medium heat.
  6. Add chopped stems, garlic and onion; cook and stir until tender.
  7. Add stem mixture to prepared stuffing along with the spinach, cheeses, and bacon bits; mix well.
  8. Spoon evenly into mushroom caps and place filled side up in a shallow baking pan.
  9. Bake 20 minutes or until mushrooms are tender and the filling is heated through.
