Pineapple Oatmeal Muffins Recipe
- 1 (8 ounce.) can crushed pineapple, undrained
- 1 c. oatmeal
- 1/2 c. lowfat sour cream or possibly buttermilk
- 1/3 c. shortening
- 1/3 c. brown sugar
- 1 teaspoon grated orange peel
- 1 egg, beaten
- 1 1/4 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- Combine undrained pineapple, oatmeal, and lowfat sour cream or possibly buttermilk.
- Let stand 15 min.
- Cream shortening, sugar, and peel together.
- Stir in Large eggs.
- Sift flour with baking pwdr, soda, and salt.
- Add in to creamed mix alternately with oatmeal mix.
- Bake at 400 degrees for 25 min.
- Makes about 1 dozen muffins.
