Vickys Panfried Scallops with Lime and Coriander, Gluten, Dairy, Egg & Soy-Free
- 8 scallops, trimmed
- 1 tbsp olive oil
- 2 clove finely chopped garlic
- 1 tsp finely chopped red chilli
- 1 juice of half a lime
- 1 salt and pepper
- Fry scallops in the oil for 1 minute, then turn and sprinkle with the garlic and chilli
- Cook for another minute then squeeze over lime juice
- Plate, then sprinkle with coriander and season.
- Serve immediately
