Basic Yeast Dough

  1. Place yeast, 1 teaspoon sugar and 1/4 cup warm water in a small bowl.
  2. Set aside.
  3. Combine milk, 1/4 cup sugar, shortening and salt in saucepan and heat to just below a boil. Cool to lukewarm. Add 1 1/2 cups flour; stir well.
  4. Add egg and yeast; blend well. Gradually sift another 2 cups flour until batter begins to turn loose from the sides of the bowl and follow the spoon around the bowl.
  5. Turn dough out on well floured surface and knead. Place in well oiled bowl and place in warm place until it doubles in size.
  6. Turn out onto floured surface.
  7. Knead. Shape into biscuits or loaf and let rise again until double in size. Bake at desired temperature, about 350u0b0 to 400u0b0, depending on thickness.
