Fruity Parcels
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- 1/2 cup sugar
- 1 egg
- 1 tablespoon oil
- 1 teaspoon vanilla essence
- 2 cups plain flour
- 1 teaspoon baking powder
- 1 apple, peeled and grated King Sooper's 1 lb For $0.87 thru 02/09
- 1/2 cup craisins
- 1/2 cup chopped dried apricots
- 1/2 cup sultanas
- 1/2 cup water
- 2 tablespoons orange juice
- 1 tablespoon brown sugar
- 1 egg, lightly beaten
- 1/4 cup chopped slivered almonds
- Place the first 5 ingredients in a food processor and process until smooth.
- Add the sifted flour and baking powder and process until a dough forms.
- Roll dough into a ball, wrap and refrigerate 30 minutes.
- Combine the next 7 ingredients in a saucepan over a low heat.
- Simmer until liquid is absorbed and the fruit has softened.
- Roll out pastry between baking paper into two 12cm x 40 cm rectangles.
- Place half the filling lengthways along the centre of one pastry sheet, then fold lengthways to enclose the filling.
- Press to seal edges, trim excess pastry and slice into 3cm parcels.
- Continue with remaining pastry and filling.
- Brush tops with egg, sprinkle with almonds and bake at 180C for 15-20 minutes.
