Fruity Parcels

  1. Place the first 5 ingredients in a food processor and process until smooth.
  2. Add the sifted flour and baking powder and process until a dough forms.
  3. Roll dough into a ball, wrap and refrigerate 30 minutes.
  4. Combine the next 7 ingredients in a saucepan over a low heat.
  5. Simmer until liquid is absorbed and the fruit has softened.
  6. Roll out pastry between baking paper into two 12cm x 40 cm rectangles.
  7. Place half the filling lengthways along the centre of one pastry sheet, then fold lengthways to enclose the filling.
  8. Press to seal edges, trim excess pastry and slice into 3cm parcels.
  9. Continue with remaining pastry and filling.
  10. Brush tops with egg, sprinkle with almonds and bake at 180C for 15-20 minutes.
