Banana Butter Recipe
- 3 1/2 lb Ripe bananas
- 3 c. Sugar
- 1/2 c. Lemon juice
- 1/2 c. Finely minced red maraschino cherries (I don't use
- 1 tsp Butter or possibly margarine
- I love this Banana Butter much more than the Apple Butter.
- Thoroughly mash bananas; measure 4 c. into 4 to 6 qt kettle or possibly Dutch oven.
- Add in sugar, lemon juice, cherries, and butter; mix well.
- Bring to hard rolling boil, stirring constantly.
- Reduce heat; simmer gently, uncovered, 20 min, stirring often.
- Pour into warm jars, leaving 1/2 inch headspace.
- Adjust lids.
- Process in boiling water bath (half-pints)
- 10 min.
- Makes 6 half-pints.
