Savory Orzo Salad

  1. Cook orzo pasta according to box directions.
  2. Meanwhile start cutting the bell peppers, onion, cilantro, sundried tomatoes and garlic.
  3. Put all the ingredients in a bowl plus the avocado oil and salt.
  4. Drain the orzo pasta.
  5. After draining pour the pasta with the rest of ingredients.
  6. Mix very well.
  7. Taste to see if it needs more or less salt.
  8. Let stand for about 20 minutes.
  9. Then stir again and put in the refrigerator to chill for at least 3 hours.
  10. Serve as a side dish with meat, poultry or fish.
  11. Or enjoy as is.
