Savory Orzo Salad
- 1 box of orzo pasta.
- 1 red and 1 green bell pepper, diced
- 1 onion (yellow, red, white, whichever you like), diced
- 2 garlic cloves, mashed ( if you are like me who loves garlic, can add two more)
- 1 About 1 cup of cilantro, chopped.
- 1 jar of sundried tomatoes with the oil
- 1 Kosher salt or sea salt to taste
- 1 About 2/3 of a cup of avocado oil.
- Cook orzo pasta according to box directions.
- Meanwhile start cutting the bell peppers, onion, cilantro, sundried tomatoes and garlic.
- Put all the ingredients in a bowl plus the avocado oil and salt.
- Drain the orzo pasta.
- After draining pour the pasta with the rest of ingredients.
- Mix very well.
- Taste to see if it needs more or less salt.
- Let stand for about 20 minutes.
- Then stir again and put in the refrigerator to chill for at least 3 hours.
- Serve as a side dish with meat, poultry or fish.
- Or enjoy as is.
