Bean Salad with Citrus Juice and Hot Sauce

  1. Fill a high sided skillet with 1 inch of water and bring to simmer.
  2. Liberally salt the water.
  3. Add beans and cook 3 to 4 minutes.
  4. Drain and cool under running cold water.
  5. Whisk juices and hot sauce together in a shallow salad bowl and stream in olive oil.
  6. Add beans and toss to coat.
  7. Season the beans with salt and pepper, to taste.
