Sophie's strawberry cream chocolates.
- 100 grams chocolate
- 1 strawberry sugar granules
- 2 capfuls of strawberry essence
- 1 red food colouring (optional, i just like to make them a bit brighter inside)
- 100 grams icing sugar
- 1 Water
- Mix strawberry mix items together, and put to one side.
- Get your chocolate mold and sprinkle some strawberry sugar in the bottom of each mold.
- Melt chocolate in the microwave by breaking into small pieces and heating for 30 seconds.
- Stir and repeat until it's completely melted and smooth.
- Coat the edges of the molds in melted chocolate - leave no gaps, and make sure it is all the way up the sides.
- Keep it as thin as possible to allow space for the filling.
- Cool in the fridge until set.
- Fill each mold with strawberry filling.
- Leave a gap at the top of each mold for an additional layer of chocolate later.
- Pop it back in the fridge for 10 minutes.
- Pour a final layer of chocolate so the molds are filled and you have encased the strawberry filling completely.
- Return to the fridge for ten minutes.
- Your chocolate is done!
- Pop them out of the molds, and store in a tub lined with grease proof paper in the fridge.
- Alternatively, you could make any other flavour you like - the strawberry sugar topping is optional, and you could use any kind of essence to flavour the filling.
- For instance, why not try putting a tiny sliver of lemon zest in the top instead of the flavoured sugar, and using lemon essence instead of strawberry?
- Tiny fudge pieces, and filling with caramel?
- The possibilities are endless!
