Sophie's strawberry cream chocolates.

  1. Mix strawberry mix items together, and put to one side.
  2. Get your chocolate mold and sprinkle some strawberry sugar in the bottom of each mold.
  3. Melt chocolate in the microwave by breaking into small pieces and heating for 30 seconds.
  4. Stir and repeat until it's completely melted and smooth.
  5. Coat the edges of the molds in melted chocolate - leave no gaps, and make sure it is all the way up the sides.
  6. Keep it as thin as possible to allow space for the filling.
  7. Cool in the fridge until set.
  8. Fill each mold with strawberry filling.
  9. Leave a gap at the top of each mold for an additional layer of chocolate later.
  10. Pop it back in the fridge for 10 minutes.
  11. Pour a final layer of chocolate so the molds are filled and you have encased the strawberry filling completely.
  12. Return to the fridge for ten minutes.
  13. Your chocolate is done!
  14. Pop them out of the molds, and store in a tub lined with grease proof paper in the fridge.
  15. Alternatively, you could make any other flavour you like - the strawberry sugar topping is optional, and you could use any kind of essence to flavour the filling.
  16. For instance, why not try putting a tiny sliver of lemon zest in the top instead of the flavoured sugar, and using lemon essence instead of strawberry?
  17. Tiny fudge pieces, and filling with caramel?
  18. The possibilities are endless!
