Lamb Salad
- 3 tablespoons lemon juice
- 1 lemon zest
- 14 cup mint, shredded
- 2 tablespoons olive oil
- 400 g lamb backstraps
- 14 cup pine nuts
- 2 garlic cloves, minced
- 400 g spinach, chopped
- 12 red onion, finely sliced
- 34 cup kalamata olive
- 4 tablespoons olive oil
- 120 g feta cheese
- Combine lemon juice, zest, and mint in small bowl.
- Heat 2 tablespoon olive oil over medium heat.
- Warm lamb, roughly 1 minute each side.
- Remove from heat.
- Saute garlic and pine nuts, roughly 2 minutes.
- Combine lamb, pine nuts & garlic, spinach, onion, and olives.
- Whisk 4 tbsp olive oil into dressing mixture, toss with salad.
