Fresh Whole Cranberry Sauce
- 1 12 cups sugar
- 34 cup water
- 2 whole cinnamon sticks
- 3 whole allspice or 14 teaspoon ground allspice
- 3 whole cloves or 14 teaspoon ground cloves
- 12 ounces whole fresh cranberries, rinsed
- zest of one orange
- If using whole allspice and cloves, securely wrap them up in cheesecloth so it's easy to retrieve later.
- If using ground spices, bring water, sugar and spices to a boil in medium saucepan until sugar has dissolved and mixture is syrupy.
- Add whole cranberries and when they just begin to pop remove from flame.
- Add grated orange zest and refrigerate at least one hour.
