Prawn Gyros With Mango Marmalade & Ginger Tzatziki
- 1 kg large shrimp
- 1 shallot, finely sliced
- 1 garlic clove, finely sliced
- 1 lemon, juice of
- 8 ounces rose wine
- 1 tablespoon paprika
- 13 teaspoon cumin
- 13 teaspoon fennel seed, crushed
- olive oil
- salt
- pepper
- 1 large mango, very ripe, peeled and cut into small pieces
- 1 cup brown sugar
- 12 teaspoon cardamom seed, ground
- 12 teaspoon curry powder
- 1 lemon, juice of
- 12 kg yogurt
- salt
- 1 tablespoon ground ginger
- 1 small cucumber
- Prawns: Peel the prawns and remove the heads, putting half the heads to one side.
- In a deep frying pan, make a marinade of the shallot, garlic, lemon juice, wine, paprika, cumin, olive oil, salt and pepper.
- Let the prawns marinate for about one hour.
- Then add the heads and simmer for 4-5 minutes.
- Remove from the hob and remove the heads.
- Remove the prawns from the sauce, chop into small pieces, arrange on a plate and pour the sauce over them.
- Marmalade: Boil a cup of water in a saucepan with the sugar for 5-6 minutes to make a thick syrup.
- Add the spices and remove from heat.
- Add the mango and lemon juice and stir.
- The mixture should be the texture of marmalade.
- Tzatziki:Wash and peel the cucumber, grate and strain.
- Put the yogurt in a bowl, add salt, ginger and cucumber and mix well.
- Serve the prawns, marmalade and tzatziki separately on the plate.
