Broccoli Soup With Sharp Cheddar

  1. Peel and chop potatoes and onions.
  2. Remove broccoli stalks from florets; peel and chop; set florets aside.
  3. Bring broth to boil in a large pot.
  4. Add potatoes, onion and broccoli stalks, bring to a boil.
  5. Reduce heat, cover and simmer 20 minute Add florets and simmer 5 min more.
  6. Add orange rind, thyme, salt and pepper.
  7. Blend in batches with the milk.
  8. Reheat slightly before serving.
  9. Pour into bowls and sprinkle with 1/3 cup cheese for each bowl.
