Healthier Soft Snickerdoodle

  1. Preheat oven to 350F.
  2. Mix grape seed oil, 1 1/2 cups sugar and eggs thoroughly in a large bowl.
  3. Combine flours, cream of tartar, baking soda and salt in a separate bowl.
  4. Blend dry ingredients into wet ingredients.
  5. Mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
  6. Roll 1 tablespoon of dough into a ball.
  7. Coat by gently rolling ball of dough in the sugar mixture.
  8. Place on ungreased cookie sheet, and bake 10 minutes.
  9. Let cool on cookie sheet for a minute before removing.
