Kousa bi Gebna

  1. Fry the onion in oil till soft and golden.
  2. Poach the zucchini in salted water for a few minutes, until only just tender, and drain.
  3. In a bowl, mix the eggs and cheese, add pepper and nutmeg, and fold in the onions and zucchini.
  4. Pour into a greased ovenproof dish and bake in a preheated 350F oven for about 30 minutes, or until firm and lightly browned.
  5. Serve hot or cold.
