Coctel de camaron mexicano

  1. Cook shrimp and the set under cold water to cool off
  2. Meanwhike , dice the onion and throw in a very large bowl
  3. Squeeze lime on top of onion until onion is emerged.
  4. Add a couple dashes of salt
  5. Dice tomato, cucumber and celery and add to bowl.
  6. Mince cilantro and add to bowl.
  7. Dice jalapeno and avocado finely and set aside separately
  8. Dice and add shrimp, ketchup, and clamato to bowl.
  9. Stir until combined.
  10. This is more like a ceviche than anything else
  11. Stir in avocado
  12. Add jalapeno, salt and pepper to taste.
  13. Serve in bowls and crush plantain chips on top
